Gather ‘round the monitor once again with Chef Mike and Jenna as we ride out the winter with hot soups to warm your soul. In this session of Seasonal Chefs Online, We’ll talk about building rich flavors from simple ingredients, making and using stock, and of course, there will be demos of delicious soups for you to make at home!

This month we will be making mushroom soup together. The full list of ingredients includes:

• 1/2 lb Mushrooms

• 1 qt Milk, 1/2 and 1/2, or unsweetened soy milk

• 2-3 qt Vegetable, mushroom, or chicken stock/broth

• 1 med Yellow onion or shallot

• ¼ lb Butter

• Olive oil, safflower oil, or other cooking fat (enough to sauté) 

• 1 c All-purpose flour, or gluten-free alternative flour of your choice

• Salt and pepper 

• Optional: garlic, white wine, lemon juice or vinegar, heavy cream, immersion blender, fresh herbs, particularly thyme, bay leaf, rosemary, parsley

The program kit will include 1/2 lb mushrooms and some herbs. As you register you will have the option of selecting to receive a kit or declining. If you are not a mushroom fan or simply prefer to shop for the full list of ingredients you have that option. Chef Mike has suggested the following substitutes for the mushrooms and will offer advice for how to use them during the program: chicken or cauliflower, or celery.

In the week before the program, you will receive an email from Jenna with details about picking up your program kit and logging into the online session.
